Moist and wonderful plantain flour based vegetable bread. They'll never know how healthy it is! Try replacing some of the zucchini with grated carrots.

Ingredients:

 

  • 1 ½  c POW! Plantain Flour

  • 1 teaspoon baking powder

  • 1 teaspoon cinnamon

  • 1 c sugar

  • 1 teaspoon salt

  • 1 c coconut oil

  • 3 eggs

  • 1 c zucchini

  • 1 c grated carrots

  • 1 teaspoon lemon juice

  • ¼ c water

  • ½ c walnuts optional

  • ½ cups chocolate chips (optional)

 

 


Instructions:

 

  1. Preheat your oven to 350 degrees Fahrenheit

  2. Mix all ingredients

  3. Bake at 350 for 40 min
